Peanut Butter Cookie Sandwiches

I looooooove peanut butter and anything you can dip in peanut butter.  This recipe was a little different than the others I had found, which is why I originally chose it. Does anyone remember Nutter Butters? I think I had AT LEAST one package a day in elementary school.  Ok so these cookies taste like homemade soft and chewy nutter butters.  Can you say YUM!?!! 

FOR THE COOKIES:

  • 1/2 Cup Melted Butter
  • 3/4 Cup Brown Sugar
  • 1 Cup of Peanut Butter
  • 1 Egg 
  • 1 Egg Yolk
  • 1/4 Cup of Greek Yogurt
  • 2 teaspoons of Vanilla Extract 
  • 1 1/2 Cups Flour
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Salt

FOR THE FILLING:

  • 1/4 Cup Butter, softened 
  • 1/4 Cup Peanut Butter
  • 3/4 Cup Powdered Sugar
  • 1/2 teaspoon Vanilla Extract 
  • 2 teaspoons Milk

Preheat oven to 350 degrees Fahrenheit.  And the start making your peanut butter cookie batter!  Cream your butter, sugar, and peanut butter.  Cream until nice and smooth, and then add eggs, yogurt, and vanilla.  In a separate bowl combine your dry ingredients; flour, baking soda, and salt.  Now add the dry ingredients to the wet ingredients.  Try not to eat all of it at this point... And then roll into 1 inch balls.

Too make them real pretty you can flatten them with a fork and make a crisscross pattern. and then bake the cookies for about 10 minutes.  The outsides should be a bit golden and then soft and gooey in the middle.     

While your cookies are baking.  Go ahead and whip up the frosting for the filling. This one is easy.  And you can make a bit easier to mix if you nuke it in the microwave for about 7 seconds.  Butter, Peanut butter, Sugar, and Vanilla in a microwave safe bowl.  Mix, mix, mix and the put in into the fridge until your cookies are done.  It should be a pretty thick frosting.

Ok now the hardest part; letting the cookies cool completely!  I would recommend putting them on a cooling rack and letting them sit until they are really cold.  If you don't let the cookies cool you will have a very messy frosted cookie disaster.  Which isn't the worst thing in the world, but it does require more clean-up.

These adult Nutter Butter cookies will take you on a trip back in time.  Enjoy!
