In Amsterdam we had an amazing breakfast at Lavinia Good Food. On our way out we decided to get some food for later. One of them being an unreal sweet potato salad thingy. I decided to attempt to recreate it. Here goes nothing...
I didn't have too much to go off of besides the way it tasted. But I knew what the ingredients were, so I started with that. The recipe is actually super simple with only four ingredients, but it takes some time to prepare.
If anyone has ever cooked with sweet potatoes you know how delicious they are, but you also know how long they take to cook through the middle. I almost always bake mine in the oven, because it's easy and you can mostly forget about them when they are cooking.
To start off with this dish preheat your oven to 375 degree fahrenheit. Wash your sweet potato skin off and use a little elbow grease while you're at it. I like to keep the skin on for two reasons. One the nutrients are hidden in there and two it's a pain in the butt to peel them. Cut your potatoes however you choose; I like the way the wedges look in the dish.
Put these suckers in the oven for an eternity. I had three potatoes and it took about an hour to bake all the way. Keep your eye on them, because they can burn pretty fast during the last 15 minutes of baking. I like when they have a little bit of black along the edges of my wedges. I take them out when they are looking a little like this:
I like this dish cold, but my husband said it would be better warm. To each their own. So I let them cool off for awhile and then added in the rest of the ingredients. The figs I sliced into quarters earlier and just added them in. I LOVE goat cheese, so I put in a whole lot. And on top I drizzled some balsamic glaze.
And there you have it! A delicious and healthy side dish.
